Rye Bread

OOOOOHHHHHHH.....this cook-book is wonderful! Thank you for your contirbution.

This cook-book gives basic explanations for the basics of making bread and as a beginner I needed that.

I found a recipe for Rye Bread...I am going to make.

I especially love lots of CARAWAY SEEDS baked nice and toasty on the top or even in the batter/dough. :D

You folks out there...take the time to go take a look....

It is old-timey basic recipes without all the newer fancy chemically laden ingredients that newer recipes want in their make-up. :)

here is an excerpt:

Rye Bread

Rye Bread
1 cup scalded milk, 1-1/2 teaspoons salt
1 cup boiling water, 1/4 yeast cake dissolved in
1 tablespoon lard, 1/4 cup lukewarm water
1 tablespoon butter, 3 cups flour
1/3 cup brown sugar, Rye meal

To milk and water add lard, butter, sugar, and salt; when lukewarm, add dissolved yeast cake and flour, beat thoroughly, cover, and let rise until light. Add rye meal until dough is stiff enough to knead; knead thoroughly, let rise, shape in loaves, let rise again, and bake.

You know you can sub lard for crisco....right?
