5 Bean salad recipe

This was from my old NY neighbor, Angie Foster. Long gone, but never forgotten.
It's an old New England recipe (she was originally from Connecticut), she gave it to my mom, and my mom gave it to me.

It's a great way to use up prep bean cans too :lol:

5 cans of beans (I like 1 each of kidney, lima or butterbeans, chickpeas, wax, and green)

1 1/2 cups vinegar, mix of white and cider vinegar (3/4 cup of each)
1/2 cup water
2 cups sugar ( I cut this down to more like 1 3/4 or 1 7/8 cup of sugar or it seems too sweet for me)
1 tsp salt
sprinkle of pepper

2 or 3 onions, depending on size of them
1 green pepper
3 ribs celery

Drain and rinse beans and put in large non-reactive bowl (not aluminum, I use a big pyrex one).

Mix vinegar, water, and sugar in pot and bring to a boil on the stove. Set aside to cool a little.

Cut the onions, celery, and green pepper fine and throw in bowl with the beans. Mix it all up.

Add the salt and pepper to the vinegar/water/sugar mixture and stir. Pour over bean/veg mixture. Cover and put in fridge, let sit for at least a few hours before eating. Use slotted spoon to serve to drain the brine out of it.

Thanks Tweakette.....I had lost my recipe for the "dressing"....this looks pretty close!

I like adding a teaspoon up to a tablespoon of a spicy mustard to the dressing. I leave out the sugar too. Of course, I dont boil it either. Just a whisked vinegrette (sp?)
