I LOVE cappuchino, but to buy it ready made is toooo expensive. Even the mixes in the stores are a little pricey. After playing with a few hot choco recipes, i came up with this for vanilla mocha cappuchino.

Scant 2/3 cup instant coffee
3 Tblsp cocoa
1 cup sugar
1 cup non dairy creamer
1 cup dry milk
1 pkg. vanilla pudding mix( i've used both instant and cook with good results with each)

mix well. If the instant coffee crystals are too big, as mine were, i just put in food processor and whirred a few minutes.It might be easier to just process the coffee, but i never remember til i have it all mixed.
I use 3 teaspoons for each cup, adjust for your own taste.
It doesn't cost much as I usually have everything except the instant coffee in the cup board.

That sounds delicious! The ready-made mixes are a bit too expensive for my budget as well. I was wondering if you substituted chocolate pudding for the vanilla would you end up with mocha cappuchino? I love mochas.

I made this for Christmas and gave it out to everyone. I had picked up some Christmas glass jars with stopper fitted lids a couple of years ago at the dollar store. I filled each one and added a little card with directions. They were a hit. I've had several requests for the recipe. Thanks again auntnuts!
