Chocolate cake using no raw eggs

My late MIL's sister had this recipe. I found the recipe card in my MIL's handwriting. DH got all teary when I showed it to him, so I decided to make it for him today as a suprise. I'm going to make a coconut frosting to go with it. But, Bless her heart, she did not include how long to cook the cake. I guessed, and it turned out well.

Although it uses no eggs, it does have mayonnaise in it.

Aunt Mildred’s Mayonnaise Cake

2 Cups Flour
1 Cup Sugar
4 Tblsp. Cocoa powder (plus a little extra for “flouring” the pans)
1 tsp baking soda
Pinch salt
1 C. Mayonnaise
1 C. Water
1 tsp. vanilla

Sift together all dry ingredients. Add to wet ingredients, mix well. Pour into greased and floured pan(s). I used PAM and cocoa powder instead of flour for the pan.

Bake at 350. 30 Minutes for a 9x13 pan, probably a little less for 2 – 8” rounds.

Its got a nice texture, and a nice chocolate flavor.
