Cooking pancakes

Another thread got me thinking: what's the best way to cook pancakes? I like them when they're just a bit crunchy on the edges. But when I cook them they never turn out how I like them.

Try increasing the amount fo oil you use in the recipe for a crispier pancake.

We like our pancakes fluffy...regardless of the recipe, letting the batter sit for about 15-20 minutes seems to do the trick.

A cast iron griddle is also the perfect tool for pancakes.
