Food Crack Slaw

I use this recipe a lot. It's a quick meal to prepare and very healthy. DH really likes it too. I don't use ground beef, I use ground chicken. You can use turkey too, but chicken tastes closer to Thai (larb gai). I also add peanuts into the salad.

Lot's of Crack Slaw recipes out there!

I was thinking of using the Splenda brown sugar that I have and which I use all the time in my beef and broccoli lo mein.

Do you eat this with anything else, or just as is in a bowl? V

I started to make this, but didn't have hamburg so I used sausage. Then realized I don't have the sesame oil so I used olive oil. The found out I didn't have the cabbage I thought I had, so I mixed it with black beans and corn....:gaah:

It was good anyway. I'll have to actually try your recipe next time.

We love this recipe in our house. It's like eating Chinese food without the carbs. It's quite addictive if you ask me.

The recipe sounds delicious to me as is! DH doesn't like Asian type food, and was wondering if there is a Mexican version? He likes just plain fried cabbage with onions, bell peppers and fried bacon crumbled up in it.

I think the only successful way of making a Mexican type version is to get some taco seasoning (I like the Taco Bell brand which I get on Amazon and you can find it at some grocery stores) and follow the directions on the seasoning packet and then when the meat is all mixed up with the seasoning, I would put the shredded cabbage in with it and let it simmer per the recipe above.

I prefer for time sake is to buy the prepackaged coleslaw mix (without the dressing packets that some come with), just dump the raw slaw mix in the the meats, stir, simmer and then it's ready to eat. V

Thanks, vessie! There was a Mexican lady I use to go to church with that made a Mexican style fried cabbage dish. I don't know how she made it, and she's passed on now. I'm pretty sure that she used a can of Rotel in it. Hopefully, I can come up with something. I'll try the taco seasoning. I also use the prepackaged coleslaw mix.

Rotel added to the dish would be a good addition, it would enhance the dish! V

The Crack Slaw is soooo good!

There are so many similar recipes for this out there but I didn't waiver from the recipe above.

I saw that some recipes called for putting 1 Tbs. of Hoisin sauce, so put some in a bowl and added a bit just to see how it tasted and it's really good!

Add's that brown sugar tasting sweetness (I did add the Splenda to it), the Hoisin sauce which is low carb, just added that extra touch in taste.

I'll let my husband add it to his bowl if he likes but am keeping the skillet the way it is for now.

Can't wait to see how it tastes tomorrow as everyone at the recipe sites says that it's better the next day. V

Bumping this up because it's so darn good!

Easy and quick to make when you've had a long day, and so worth it!

Especially as it's even better the next day! V

Hoison sauce is quite high in carbs and sugar. One TBS has 7.1 grams of carbs! I learned to read labels a long time ago.

I do use the brown sugar Splenda, but sparingly.

I love this stuff! we use ground chicken and savoy cabbage. I slice the cabbage very fine. I also more than doubled the garlic (granulated) doubled the soy sauce, added some whole raw cashews and finely chopped sweet onion. I omitted the splenda. I like HOT so the sriracha flows freely - at least on my portion of it :D

You could use cumin, lime juice, maybe a little chili powder. Omit the soy sauce and sesame oil, and find some Mexican stewed tomatoes, drained to mix in (or salsa). Also I'd top it off with minced cilantro and a dollop of sour cream.

Also, make your own Hoisin sauce, use FiberYum and/or xanthan gum with xylitol if you want it thick and sweet, add the 5 spice powder and whatever else is in it.

Keto cinnamon rolls

cinnamon-rolls-12.jpg

Ingredients
Base

1.5 Cups Mozzarella Cheese
2 Tbsp Cream Cheese
1 Egg
3/4 Cups Almond Flour
1 Tbsp Erythritol (SoNourished) (or xylitol)

Cinnamon Inside

1 Tbsp Erythritol (SoNourished) (or xylitol)
1 tsp Cinnamon
1 Tbsp Warm Water

Icing

1 Tbsp Cream Cheese
1 Tbsp Heavy Cream
1 Tbsp Erythritol (SoNourished) (or xylitol)

Instructions

Mix the cheese together into a microwave safe bowl, and heat on high in 30 second increments until the mixture is melted just enough to be able to bind completely. (this should be about 1.5 mins)
Mix in the stevia, egg, almond flour. Put in between two sheets of parchment paper and roll out into a rectangle.
Place the dough in the oven flat out for around 5 mins at 180C (355F). Remove from oven and let it cool slightly.
Mix the stevia, cinnamon, and water in a small cup and spread over the rolled out cheese mixture.
Begin from one side, and roll the scrolls into one long roll. Cut into 2 finger lengths and place onto a baking tray. Put in the oven at 180 C (355F) for another 7 mins.
Mix the cream cheese, cream and stevia together and but it into a plastic bag. Cut the corner off and pipe over the cinnamon scrolls. Enjoy!

My thoughts on these would be to try adding a little bit of yeast and maple syrup (the yeast will eat the sugar) or baking powder to allow them to puff up a bit. Could also try omitting cinnamon and using a sugar free berry spread to change up the recipe. I would also use lots of vanilla in either recipe.

Keto Rum Balls (nice Christmas addition!)

rum_balls-5.jpg

Ingredients

1/4 Cup Cocoa Powder
1/4 Cup Coconut Oil
1/4 Cup Almond Flour
2 Tbsp Coconut Flour
2 Tbsp. Heavy Cream
1/2 Cup shredded coconut
2 Tsp Erythritol (SoNourished) (or xylitol)
60 ml Rum (2 oz)

Instructions

Mix all the ingredients together into a bowl. Combine until sticky. Depending on the weather, if it gets to sloppy, just add some more almond flour to the mix.
Roll into balls and roll in some extra shredded coconut. (I blended my shredded coconut in the nutri-bullet so it was smaller shreds). Let the disco overwhelm you as you point to the sky, then point to the floor whilst making these ones!
Refrigerate on a plate and enjoy!

Made the crack slaw tonight, using hamburger, added sliced mushrooms. Omitted the ginger as bf doesn't like it, had no sriracha chili sauce so used tobasco. On my plate I sprinkled celery seed and cilantro on it-it was pretty good!
