I thought I would start this to go with the thread on the main and perhaps a mod can move it over here eventually, I like keeping recipes in this room too as it makes it easier to go back and browse.

Pork Roast:

Sear the outside of the roast in a cast iron pan or skillet in olive oil on all sides and the top.

Sprinkle Roast lightly with salt, you can also sprinkle with garlic and rosemary if you like.

Slice and quarter apple some apple slices (remove cores peals are optional)

Place apples in the bottom of a sprayed or oiled crockpot.

Add a bit of apple juice no further than the top of the apples

Place seasoned, seared pork roast on top of the apples

Cook in Crockpot on high for 1 hour and then low for 3 hours (and check) or on low for about 5 hours.

You can marinate the pork for several days before if you like but you don't have to - we cooked this last night, it also makes great leftovers for hot or cold sandwiches.

Pork chops can be cooked the same way (be sure to sear them first) but take less time in the crockpot (check after 2 hours on high).

You can make a savory version by using partly cooked (or leftover sliced) baked potatoes as a base, chicken broth or water as the liquid and season either Italian (Rosemary, tyme, garlic, oregano) or kind of Mexican (rub with cumin, chili powder, garlic, a bit of clove and/or pour salsa on it).

Pan option with apples

Peel, core and slice 1 to 3 apples and put in a cast iron pot or pan with butter, brown sugar and/or honey (you can add optional seasonings like cinnamon and clove if you like).

Brown apples on med-low heat in the butter for about 10 to 15 minutes until coated and caramelized.

Remove apples from the pan and sear the pork chops in the SAME pan (do not clean) you can add more butter or some olive oil

Now, remove chops for a moment, put 1/2 of the apples back into the pan, place the chops on top and then apples on top of that.

Add a few tablespoons of apple juice (or orange juice, water, other liquid), place lid over the pan and cook for about 10 to 15 minutes on low - do not overcook if you can avoid it.

Serve on rice, potatoes, noodles or bread they all work - so does surprisingly gingerbread.

The pork roast sounds good, I have a couple of large boneless pork loins in the freezer, I'll give this a try.

Pork is one of the meats that I can regularly. One of our favorite recipes for the canned pork is:

3 shallots minced {use an onion if you don't have shallots)
1 T olive oil
1 Pint jar of canned pork (if cooking for 2 people)
2 T flour
1 can green chili's
1 can tomato sauce
3 cups water
2 cups cooked rice
Directions:
In large skillet sauté shallots Add pork. Sprinkle in flour until well incorporated with pork. Add green chills, tomato sauce and water. Cook for about 1 1/2 hour until most of water has cooked down and thickened. Serve over rice.
