…… frozen eggs

I was given some eggs and they were left in the the car. There were eight dozen. Eighteen were cracked and frozen hard. I peeled these and put in freezer containers and in the freezer. The remaining eggs that I opened were Slushy I just put them in the refrig to thaw. Now for the important part, I know the broken ones would not be safe if they had been in the hen house but they were in clean cartons. How will the freezing affect the whole ones?

I'd probably let them thaw and feed them to the pigs (or dogs/cats) for aa little extra protein. I have a pretty high 'ick' factor tolerance, so I might even use them - as long as they were well cooked (in baking).

I'd use the cracked ones in baking... not cooked for breakfast, unless you like yours cooked *very* thoroughly.

We have our own hens, so I haven't frozen eggs much. The "experts" recommend that you add sugar or salt to whole eggs or egg yolks before freezing, because they otherwise get pretty "sticky". However, for the short time yours were frozen, I'd just thaw them in the fridge and use them normally.

I second this and you can try hard boiling a few and make egg salad sandwiches or deviled eggs.
