Recipe Garlic Scapes and Arugula

Aside from pesto, which I plan to make tomorrow (too wet to get into the garden today) what else can I do with these two ingredients? I also have gobs of cherry tomatoes, broccoli, a butternut squash and various other veggies.

It’s a bit early to worry about garlic scapes yet this year, but I dry them in the dehydrator and then grind them in a coffee grinder. They lend a subtle garlic flavour to more delicate dishes like scrambled eggs or a cream soup.
