German Potato Salad

I give up.
My father used to make this. It's good.

6 or 7 medium-largish potatoes, boiled in their skins til just tender
about a half cup of thinly sliced onions
salt, pepper
about 1 tsp sugar
vinegar, oil
bacon, cooked til crisp and crumbled, 1/2 to 1 lb depending on how much you want


Peel and slice/cube the potatoes when cooled, and place in large bowl

Put about 1/4 cup oil in heavy cast iron frying pan and gently saute the onions until limp and a little brown.

In the frying pan you did the bacon in, heat the bacon grease again (remove some if it seems way too much). When hot but not sizzling or smoking, pour in vinegar - about 1/2 cup. Carefully, stir it around and scrape up anything on the bottom of the pan, no more than 1 minute. Turn off heat.

When vinegar is done, pour on potatoes, add onions and oil you cooked them in, sugar, salt and pepper. Add crumbled bacon. Stir until nicely covered and mixed.

Best slightly warm.

These measurements are all approximate, you fix it the way you like best.

Edited to say we always used apple cider vinegar.
