…… Getting rid of freezer burn smell

Neither here nor there.
Just as the title suggests.

Cooked up twenty pounds of chicken hind quarters to can, smells like freezer burn. Can the chicken be saved? If so how?

Taste them. If it's acceptable to you, can it up. If it's just slight funky, consider canning it a spicy sauce... maybe a curry? Freezer burn is harmless, but not aestheticaly pleasing.

You can also can it up and use it gor dog food.

Once upon a time while cleaning out my freezer I came upon a steak that looked hideous with freezer burn. Did NOT smell it, but I wanted to at least SAVE it. I prepared it in my pressure cooker with some broth and minced garlic. It was heavenly!
And I made a pot roast with some round steaks from 2018. (Got lost in the shuffle) They looked fine, and 95% tasted fine. But a couple of bites were nasty...

Boneless chicken breasts freezer burn quick and bad, though, unless vacuum packed.

I can't stand the smell or taste of freezer burned ground beef or chicken. I came across some ground beef the other day that was dated 2019. I knew it was freezer burned, so I left it in the freezer to make dog food out of, later. I'll can it.

For some reason, freezer burn smell/taste does not survive pressure canning...at least that has been my experience. The reason I know is that I canned a bunch of chicken with that smell for my dogs and of course I had to taste it to see how it turned out. It was totally normal.

I also can the trimmings for my dogs and one time I accidentally opened a jar of that and made chicken salad. It wasn't until I was cleaning and got a good look at the lid that I realized what I'd done. Gristle does not survive 90 minutes in a pressure canner and it tastes pretty good lol.

Right now we have a very old dog that is having trouble eating and maintaining weight so I can quart jars about 1/3 full of chicken and trimmings and the rest water with a tiny bit of bouillon. A little of that poured over her food does wonders for her appetite. She's a big dog so I get about three meals from one jar.
