Prep Genrl How to store FD powdered food?

I have a few cans of FD powdered food products. For these particular foods, like tomato powder, etc, I'm not sure what the shelf life is after opening. I have some garlic and onion powder that has only been kept in the original plastic containers that are hard as rocks.

I'm thinking vacuum sealed in smaller jars. Any other suggestions?

also, can anything be done for the hard as rock stuff?

Um, store in single serves in plastic bags. Store in an air tight container.

Hard stuff get a mortise and pestle and pound. It will have no vitamins at all left.

I've done a little research and not really all that much out there on bulk storing of powder. One place said to add a few dried beans to a shaker of powder to help keep it dry. Well, I have gallons of dried powdered foods, so I've decided when I open a large can I'll transfer most to canning jars and vacuum seal. I have some food grade desicants and that should be beneficial.

I do have a morter and pestle. I'm thinking about cutting open the 28oz jars of garlic and onion powder and putting it in smaller wide mouth canning jars, I have to get the powder out now anyway to bang away at it.
