…… Kombucha Question

For those who make their own kombucha, I have a question. I got busy for a little while, and the kombucha was left longer than it should have been in the first fermentation stage. I got rid of the old liquid, and reinvigorated it--the scoby still looked fine--but it's still not carbonating anymore. The kombucha itself is still VERY zippy though, just as strong as the stuff from the grocery store. Is the kombucha still good for you without the carbonation, or does lack of carbonation mean it doesn't have the good stuff in it anymore?

I did notice that the scoby sits just a teensy bit below the liquid now, rather than on top like a cork. Do I just need to start over again, or is it fine the way it is?
