Baking Low Carb Keto Cream Cheese Pound Cake

I just made this pound cake except I added 1/4 cup of Hershey's Dark Chocolate (DH won't help eat it unless it's CHOCOLATE!) It turned out wonderful!

Ingredients

1 ¼ c almond flour (use sesame seed flour for a nut free option)
¾ c of swerve or other sugar substitute
1 tsp baking powder
¼ tsp of salt
4 eggs
3 ½ oz cream cheese
4 tbs softened butter
1 tsp of vanilla

Instructions

Preheat oven to 350 degrees
In a large stand-up mixer bowl beat on high the butter with the sugar substitute until light and fluffy and well incorporated.
Next add the cream cheese and vanilla and mix well. Add the eggs one at a time making sure to mix well after each addition.
Lastly, add all the dry ingredients until well combined.
In a well-greased cake or loaf pan or cupcake pan bake for 30 to 40 minutes until golden brown on top.*

If making cupcakes bake for 20-25 minutes)*

*I had t bake mine for 50 minutes. Stick a a long shish kabob stick down the center. If it comes out clean it's done.

Thanks Bardou. My husband and I started Low carb/high fat about a month ago and we are doing well. I appreciate knowing which recipes are REALLY good. I have tried a lot and many times the baked goods recipes are not as great as the reviews. I will try this with strawberries today!!

I'm going to make this again tomorrow, BUT, this time I'm going to add in lemon flavoring and some lemon zest to the recipe and omit the chocolate. I like chocolate but I also like a lighter type of cake with some cool whip on top. Might be good for the a sunny day we're expecting tomorrow....106! Isn't Keto wonderful, and we can eat the things we never could indulge in.

Thanks for posting this, and the tip on lemon zest (added some grated fresh ginger too). My mother used to make a heavy, sweet cake similar to this. Also, I had forgotten about cream cheese. I haven't had it in maybe a decade - that stuff is like ambrosia.

Made it a second time, and added frozen cranberries to the mix. Also, whipped up some heavy cream with a drop of vanilla for a topper.
Tastes best, however with a topping of heavy cream cultured with yogurt. The tart taste compliments the cranberries.
