Recipe Making Burritos for Freezing what are your Favorite Recipes?

I'm making burritos for freezing so I have quick easy meals when I'm in a rush and wondered what are your favorite combinations/recipes.

This afternoon I'm making two different ground beef recipes, one is basically taco meat, and I'll put refried black beans (that I make from scratch so it won't have lime juice in the mix) and Colby jack cheese on those burritos.

The other is a recipe that has tomato sauce, corn, with onion, bell peppers, and garlic in the meat mix and I'll have Orion Commander post that recipe later.

Tomorrow I plan to make chicken (with boneless skinless chicken thighs) and green chili burritos to freeze, I'll top those with bean dip (Fritos brand) and Monterey jack cheese

We're having meatloaf with green beans for dinner tonight, not burritos, lol.

When we have burritos for dinner we typically fill them with whichever meat filling, refried beans, and rice. However, I'm not sure how the rice will fair in the freezer, thoughts on that one? The rice has been flavored with sambal.

First batch done, made ten small burritos since I only had the eight inch tortillas on hand. I'll wait until he gets home from work, I sent him a shopping list of things to get me at the store, starting with the large tortillas and I'll do the second batch tomorrow and the chicken on Wednesdday. I'm just not feeling well at all today!

I haven't done burritos, but i freeze tons of stuffed bell peppers with a filling of ground beef, rice and seasonings and it reheats perfectly...

Thanks, I haven't made those burritos yet, I feel better now knowing there wasn't an issue with the rice.

I thought I was the only one that actually makes frozen burros for lunches and whenever. Being a bachelor they're awesome and handy.

One of my favorite go to’s since I was in my 20’s (looong time ago). I usually do a spicy taco meat with frijoles and shredded cheddar. And all versions of add-ins and goodies. They freeze great (minus lettuce and tomatoes). Stuff and wrap one at a time in foil and freeze in a gallon ziplok. Grab and go.

Breakfast burros with scrambled eggs, bacon, potatoes and onions rock too. Don't forget the cheese.

And rice is good. Freezes good too.

I plan to make breakfast burritos this weekend sans the potatoes since I’m deathly allergic to potatoes. Do you use scrambled eggs with cooked sausage and bacon? I may add some roasted sweet potatoes to the burritos.

I’m not single but I’m alone a good twelve hours each day and burritos/wraps are a very easy route for me to go. Orion Commander didn’t like the Monterey burritos because they contain very little to no meat. So we set up for me to make my own for the freezer! I may even do some chicken breast wraps with sweet chili sauce cause yeah you can always add lettuce, tomatoes, etc afterwards

I think pretty much anything you like in a burrito can make tasty. I’m still trying to perfect the perfect frozen burrito. If you do stumble on perfectin p_w, please let us know.

I’ve found that the ingredients are only half the fun. I like the larger tortillas so that I can seal the ends up (my Del Taco back ground) for freezing. That way you can bake or nuke w/o all of the goodness oozing out the ends.

Also, some stokes green chili (or home made) over the top with cheese, lettuce, tomato and what ever else makes a tasty meal . . . . awesome.

Yesterday I made shrimp and steak burritos. I froze them, and pulled one from the freezer today and had it for lunch. I use the big tortillas as well, the first batch I only had the 8-inch tortillas, I made it work those are more snack-sized. I have three types of hamburger burritos, about 24 of those so far, and six (remaining) shrimp and steak. Today I start in on the chicken and green chili burritos and the Thai inspired chicken burritos. This weekend I'll rearrange the deep freezer and then make a vat of chili to freeze up in individual bowls. So I should have plenty of food that's pre-cooked for my lunches for a while. I typically have either a piece of chicken breast, a hamburger (no bun) or some other sort of protein for breakfast. Boiled eggs, etc., for snacks.

I wrapped the burritos in aluminum foil for freezing and then into a plastic zip-lock bag, based on numerous articles I read online.

Rice is fine, I use both that and potatoes since I'm not at all allergic to either but I can't use chocolate in my sauces because I am sensitive to that (and cola nuts).

I tend to do two types of freezer burritos - both start with a pot of homemade beans - usually, soaked and rinsed pintos cooked with either a piece of bacon, 1 tsp salt and enough water or chicken broth to cover the beans.

Or the vegetarian version that has salt, dried onion, and garlic; if Nightwolf isn't eating them but Vegetarian housemate is I add a bit of chile and cumin at this point.

Once beans are cooked to nearly mush but not burned, I mash them for Nightwolf (who only likes them "refried" but smashed works) and leave a few whole for me and housemate (I like both versions).

Then I layer just beans and cheese for Nightwolf (he hates even sauce but likes shredded pork, beef or chicken).

For me I use at least beans, cheese, and homemade hot sauce, I sometimes add potatoes, rice, scrambled eggs, leftover sausage or anything else small that sounds good (cut up tomatoes, bells peppers etc)

For Housemate I might add any of the above that doesn't involve meat, also she likes chunks of onions which I don't so I may add it to hers - she also eats fish (really she's a Pescatarian) but I let her make those due to my violent shellfish allergy (I can't even be in the room any more).

I'm sort of inbetween on freezing these ahead right now, Nightwolf isn't away from home five days a week and needing healthy "fast" food, and I'm getting more and more sensitive to non-organic wheat products (no real corn tortillas here yet but the company I own one share in keeps promising me some wholesale burrito sized ones they are now making but not for the consumer market).

Anyway, the only organic ones I can get are very small and so only make kind of "snack-sized" burritos - and they tend to be a bit dry so I usually just pan fry them as "stovetop" enchiladas using similar fillings.

And yes, I do have a tortilla press, we can now get non-GMO Blue Masa (we couldn't get any non-GMO for several years) and I can roll out and make flour tortillas but they tend to end up about the same small size as the organic ones.

But right now I'm recovering from a newly diagnosed health condition and simply don't have the energy for what should be a "quick food" even when made ahead.

And when I do get some energy back my first goal is a bunch of tamales in the freezer since they are not sold here at all, not even the growing number of Mexican or sort-of Mexican food stands.

Oh, and a hint, I often sprinkle just a bit of salt on the burritos made with homemade beans, it gives a stronger salt taste without adding very much; and I've noticed the canned beans I used to use were a lot saltier.

That would be an individual choice but might work even for a family member watching their salt intake because it fools the tongue into thinking there is a lot more salt in the burritos then there really is.

I'm going to try a stuffed bell pepper style burrito this weekend, guess it'll be more like a fajita burrito which is now a thing, apparently.
