Memphis City Schools Carrot Cake

Ingredients
1 cup granulated sugar
3/4 cup vegetable oil
1 1/2 cups grated carrots
1 cup all-purpose flour
2 eggs
1/2 cup chopped raisins
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon baking powder



Instructions
Heat oven to 350 degrees F. Grease and flour a 13 x 9-inch cake pan.
Beat eggs with sugar, one at a time.
Mix dry ingredients.
Add oil to dry ingredients and mix with eggs and sugar.
Add carrots.
Pour into prepared pan.
Bake for 25 minutes.

Cream cheese frosting

INGREDIENTS

8 ounces cream cheese (room temperature)
8 tablespoons unsalted butter (cut into pieces, room temperature)
1 cup confectioners' sugar
1 teaspoon pure vanilla extract

Thanks for posting this recipe along with the frosting for it, Susan. I've had this same recipe for years, and it is one of my favorites. DH doesn't like any version of Carrot Cake, so I don't make it very often, since I'm doing Keto. We have it when we have family gatherings, though.

Carrot Cake ranks up there with my other favorites, Banana Nut Cake, Irish Cream Cake, and the tried and true, Southern Hummingbird Cake.

I’ve never heard of either

At granddaughters now, we are baking the carrot cake right now!

I've tried different recipes for the Hummingbird Cake, but this one is the best.

Ok, here's the recipe for the Irish Cream Cake. In this recipe, I don't use the Butterscotch filling, but use the Cream Cheese frosting instead. I also add 1/4 cup chopped pecans to the batter. I cheat, too, I use store bought canned Cream Cheese frosting. I use 2 cans. It's not in the recipe, but I also add toasted coconut flakes to the frosting. Just toast and press all along the sides and top.
