I'm looking for a great white cake recipe to make into cupcakes. I have never made white cake from scratch and it's for hubby's Bday. He loves white cake but I have yet to find a recipe thats not crumbley like cornbread. I want it light and fluffy (like his great aunt makes but can't get recipe).
Anyone have a recipe they care to share?

White Cake

Here is one It is moist and not crumbly

2 cups white sugar
2 cups sifted all-purpose flour
3 egg whites
1 egg
1/2 cup buttermilk

1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup shortening
1 cup boiling water
DIRECTIONS:
Mix together the buttermilk with the baking soda. Set aside. Cream shortening, sugar, eggs and vanilla. Beat well.
Add buttermilk and baking soda mixture.
Sift dry ingredients, and add to creamed mixture.
Add boiling water, and mix well.
Pour into a greased and floured 9 x 13 inch pan. Bake at 350
degrees F for approximately 35 minutes, or until toothpick comes out clean.
Let cool. I frost with cream cheese frosting.or any frosting you likereduce cooking time to 20-25 min for cup cakes
or white cake
1 cup white sugar
1/3 cup butter, softened
2 eggs
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 pinch salt
1 cup milk
1 teaspoon vanilla extract
DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. Stir in vanilla. Distribute batter evenly between the prepared pans.
Bake for 25 to 30 minutes in the preheated oven, until the cake springs back when pressed gently in the center. Cool in pans over a wire rack. When completely cooled, frost or fill as desired

I hope this helps
