…… Oh, fudge

My wife’s cookbook has a recipe for “See’s Fudge” including semi-sweet chocolate chips, marshmallows, sugar, butter, and “canned milk”. I have several cans of Carnation evaporated milk, and I have seen sweetened condensed milk, but have none currently. Which is likely the right one? I seem to recall the condensed is kinda thick and off-white, the evaporated looks like milk.

Thanky. Gonna get marshies when I pick up her ashes and death certs today. Trying to make something to take SIL tomorrow. This should go over better than my shredded chicken taco meat.
Oh, PoD, I didn’t realize you had experienced such a loss. Please accept my condolences. We may not see eye to eye on political situations, but just know that as a human being, my heart is with you, Friend.
 
Now, we MUST have the recipe. I've never made fudge before, but have wanted to try it.
3-1/3 cups sugar
4 tbl butter - 1/2 cube.
1-1/3 cup aforementioned evap milk
1 tsp salt
Bring to boil, stirring constantly, boil 5 minutes
Take off heat, add 12 Oz bag semi sweet chocolate chips
4 cups mini marshmallows
1 cup chopped walnuts
2 tsp vanilla.
Stir until all melted and uniform color.
Turn into buttered 9x13 or mini loaf pans
Hide one loaf pan from kids and hubby.

Google making condensed milk from canned milk, its all in heating in can
 
Oh, forgot to mention. You’ll have a little extra milk left in the can, and some leftover marshies in the bag. Just continue with more batches until it all comes out even.

This is the recipe I usually use....looks quite similar.

Ingredients​

  • 3 cups sugar
  • 3/4 cup unsalted butter, or margarine
  • 2/3 cup evaporated milk (not sweetened condensed milk)
  • 2 cups semisweet chocolate chips
  • 1 (7-ounce) jar marshmallow creme
  • 1 teaspoon pure vanilla extract
  • 1 cup assorted nuts, chopped and lightly toasted (optional)

Line a 9 x 13-inch pan with foil, leaving an overhang on all sides, and spray with nonstick cooking spray.

Combine the sugar, butter, and milk in a large saucepan over medium heat.

Bring to a boil, stirring constantly with a wooden spoon. If you have a candy thermometer at hand, insert it at this point. Cook the mixture, stirring constantly until the candy thermometer reads 234 F. If you don't have a candy thermometer, simply boil the sugar mixture for 5 minutes over medium heat. Continue to stir throughout this process.

Remove the pot from the heat. Stir in the chocolate chips. Once they have melted, the mixture should have a smooth, velvety texture. Add the marshmallow creme, then stir until completely combined.

Finally, stir the vanilla and nuts into the mixture until the nuts are evenly distributed throughout the fudge.

Pour the fudge into the prepared pan and spread it into an even layer with a heatproof spatula. Let the fudge set at room temperature; this may take several hours.

Went to a friend's slumber party in high school. Her mom had made a huge batch of See's fudge. We were all in the floor watching TV. We slid the cookie sheet under the couch and pulled it out prn....that cookie sheet was empty by morning. :D

You have me drooling for fudge, except that I can't stand marshmallows. What to do.... (It'd have to be a keto fudge anyway, so I guess I get to go look up a recipe for that.)
 
Made a batch today for tomorrow, apparently there’s a game tomorrow or something and SIL invited me. Opened a can of 3/16/2022 milk, and it was chunky, tossed it. Another can, same date, surprise! Can from 11/11/2021 was just fine. Need to hit the store soon. More walnuts too. This keeps me busy!
Fudge turned out fine.

Yep! - ounce for ounce or cups for cups. I'm a big fan of the Andes mints one.
So am I! But I can't find them anymore... WalMart, Aldi, and 2 local supermarkets don't carry them.

They're expensive, so after I used up the 3 gallons I got on clearance about 12 years ago, they're usually only used for "special " cookies, but it seems odd no one has them.

Probably have to use Amazon...
