Harvest Pickled Beets

We're pickling beets today.The tough outer leaves and stems went to compost, after cooking, the skin, tops and bottom went to chickens, the greens went to freezer and the pickled beets went on a shelf.

edit to add: 2 half gallon bags of greens and 7 pints of beets from 3' x 7' bed.

Seems you can pickle just about anything that comes out of the garden and beets are good canned as they are and will give you a little more verity.

Wow, that's pretty great! My beets are just a nice line of tiny green tops at this point. Good thing we have a LOT of daylight this time of year so I'll be harvesting (and pickling) in August :)

Neither here nor there.
I need to go to the farmers market and buy beets for pickling! They don't grow well in my soil, actually most crops don't grow well in our soil, and I'm not sure what I'd doing wrong.

Packy... if you haven't gotten a soil test, get one! That's basic... only after seeing what you have (in terms of macronutrients, micronutrients, organic matter and pH) can you begin to address problems...

Cooperative Extension can generally help you out... I wouldn't waste money on any of the "at home" test kits they sell...

I'll make some phone calls and see if I can scare up an extension agent to take a look at my soil.

Beet greens are highly nutritious and easy to grow in container gardens and raised beds. I start my beets in seed trays and transplant the seedlings into a hoop house. I have great gardening success and a large harvest even in our short growing season here in the north. Beet greens are super nutrition and can be eaten raw in salads or steamed and served in many dishes. They also make great omelets. They are very easy to grow.
