Farm raw packing beef do I add salt?

I always have. For whatever reason I get a better tasting final product. And yes, I add a teaspoon per quart jar.

Something else you can do is brown your meat a bit before canning and use broth as the liquid. I do this with ground beef although lately I am freeze drying meat more than canning it.

It doesn't contribute anything to the preservation of the product. It is a matter of taste only.
