Does anyone have experience with sauerbraten? I started the recipe and the marinating of the roast. So far, so good. Problem is that I've been marinating (brining or pickling) for past the three days recommended. Now what do I do? Should I just go ahead and cook it or is it beyond repair at this point?

3 days is about minimum - alot depends on your brine and the meat involved - great stuff if it comes out the other end correct >> where'd you get your recipe? - those old country church collected recipe books are the real deal

Yeah authentic recipes but difficult ingredients to find! For example, you can't just walk into Wal-Mart and pick up juniper berries! I guess I will go ahead and cook it and see what happens.

Next up...husband's family's Mock Turtle Soup! I have to fenagle the recipe from one of his cousins first. Apparently, it's a family treasure.

I never add the ginger snaps to mine. I don't like the taste. My German MIL had some great recipes that she passed on to me. Beef Rouladen is one of my favorites. Sauerbraten comes in a close second.

Yes, the recipe does call for ginger snap gravy! I don't know how authentic that part is and it sounds weird to me but hubby is German and really craves these German foods for his own personal Oktoberfest. Nope, no green cabbage here. Using red with apples and then spaetzle noodles on the side. Which I found weird because this part Irish girl thought it would be potatoes but I was told it had to be noodles. I certainly hope this all tastes good to justify the time put in!

no it's traditionally noodles - you save the potatoes for kartoffelpuffer - authentic German potatoe pancakes

Order from Ameriherb or one of the other online herb suppliers. I'm lucky in that my local co-op carries a large variety of herbs and juniper berries is one of them. Local tea supplier also sells them.
