Misc Shelf life of home canned foods

We are going through our inventory of storage foods and our eating habits and tastes have changed over the years. We have a lot of home canned items that are 3-5+ years old. How long are different foods stuffs good for??

In our experience, most home canned foods hold up very well (cool basement, stored in dark cupboards or boxes) for 5-7 years. One exception would be fruit which was canned using light or medium syrup (heavy syrup preserves texture, flavor and color much better)

Meat seems to store almost indefinitely, with very little change in flavor.

Homemade catsup darkens badly after 2-3 years.. but for whatever reason, I dont have that problem with sny other tomato products.

Thanks ST. That makes me feel much better. I won't have to throw out nearly as much as I thought I would!!

Any idea on honeyville grains whole powdered eggs? I can't find the info on whole eggs on their web site.

Your older home-canned stuff is probably a lot safer than anything you've canned in the last couple of years, because of the grand idea that Ball/Kerr had to change their seals and then brag that their seals were good for 12 months and then later changed it to 18 months.

I opened a qt. jar of my home canned green beans last night. They were as good as the day I canned them back in 2011. We're still eating home canned tomatoes that were canned in 2009. No loss of taste or color.
