*Very Unusual Rice Dish*

I give up.
This is an old recipe that I got out an Edgar Cayce book a lonnnggg time ago. I have made it many times. Either you'll love it or hate it. I only like it cold after it's been refrigerated for a day, with salt.


1 pound carrots, scraped and cooked til tender, drained and mashed
1 cup peanut butter, smooth or chunky is ok
3 cups cooked rice (Uncle Ben's is the best)
1 small onion chopped fine (or grated)
1/2 cup vegetable oil (I hate soy oil)
1 tablespoon tomato paste
2 eggs


Mix it all in a large bowl while the rice is hot so the peanut butter melts. Place in buttered large loaf pan. Bake 1 hour in preheated 350 degree oven. Do not smooth top before you bake; in fact I take a fork and make it kind of lumpy on top. This makes the top more crispy-ish.

Cool in pan. Cover pan with foil. Put in refrigerator for a day, then eat by salted slices. It's so pink and pretty!

hmmm Peanut butter and carrots with rice. interesting flavor combination. i may have to try this one. sounds like it would have a meaty flavor.

In the book (which I don't have anymore), it said it was a meat substitute. It was shown as a hot dish with a plain tomato sauce, which I intensely disliked. Believe me, it's so good cold! But I can't describe the flavor except to say I like it.

I may have this book, I'll try and look for it. My old copy was lost long ago (but I still have the carob cake Recipe taped into my 1956 Joy of Cooking) but I'm pretty sure I found one in a used book store in Dublin. That was one Recipe I never tried, though I do remember suffering through the three day apple diet in high school. I like apples, but I don't think I want to do that one again. No matter how healthy!

I do something similar with my stir fry, I mix grated fresh ginger, soy sauce, minced garlic and peanut butter with a good dash of whatever I have hot (fresh hot peppers, dried peppers etc)

It is fabulous!
