Vitamin C in rosehips

almost ready

Inactive
Anyone here have the skinny on how to best preserve the vitamin c content in rosehips? The fat tomato-y ones on the Rugosa roses are loaded with the vitamin, but I've read that cooking destroys the vit, and much is lost in drying them, too. What's the best way to prevent the destruction of the vitamin so as to have this in the winter?

Things to do with rose hips

If you type "rose hips" into google, the first page of links has a humungous amount of information. For instance, most of the vitamin is in the seeds, so you sort out the larger pods and cut them open to scrape out the seeds. The entire pod is edible, and several recipes are available. As for preserving, you just dry them. And don't worry about heat; to make tea you need to boil for 15 minutes or so to get an adequate amount of vitamin out of them. Then eat the remaining solids!
