1862 Confederate Apple Cake

2 cups either dry or fresh chopped apples
2 & 1/4 molasses, or 1 & 1/2 c honey, or 1 & 1/2 c.sugar
1 egg
1/2 c butter
2 c. flour
1 teasp baking soda
1 teasp cinnamon
1/2 teasp cloves2 teasp all spice

If useing dry apples pour 3 c. boiling water over them in a bowl,let stand over night.
Then drain & press out any excess liguid. Put fruit in a sauce pan with 1 cup of sugar or whatever sweetener u are using & cook till fruit begins to turn dark brown & most of the liguid is absorbed, takes abt 40 min. Put fruit from pan in a colender to drain rest of the way.
Preheat over to 275 deg. grease a loaf pan. Cream butter then beat in remaining sweetener. beat egg & add to the butter & sweetener. add flour, soda & spices then add to butter mix. Fold in the fruit pour in pan & bake 1 and 1/2 hours or till done cool 20 min before eating. Whipped cream is great on this & maybe some vaniila ice cream. Can also use plums or whatever fruit u like to try with this.
