If you're grilling it, you can put it skin up for a minute or so at first just to give it some grill marks but get it turned quickly.

And don't overcook it. The meat should be just firm enough to flake away from the rest of the fillet when touching it with a fork. Most people overcook seafood WAY too much and just dry it out.
