Baking Biscuits in an electric skillet!!

MARANTHA!! Even so, come LORD JESUS!!!
Just made my first batch of drop biscuits in my electric skillet!!

They are DELICIOUS!!!

The bottoms burned, and I think if I put some parchment paper under them this will help???? Yes?? No?? Anyone have any experience here.

Currently do not have oven working in the RV>>>so I resorted to new methods.

My other idea is to put a small pan in the skillet but I'm not sure how well that would work???

Also, having made biscuits in a reflector oven before, I wonder if putting aluminum foil on the lid would brown them on top????

If you have any input into this, I would appreciate some info>>>>>if not, I will experiment and report back!! :shr:

Look on YouTube and see if anyone has it on there. Does your skillet have Teflon on it? If not, I would try putting a rack in there if you have one that will fit. (Like you cool cakes on.)

No idea on how to brown the tops unless you flip them onto pan after they are done. Maybe w pats of butter.

Sounds REALLY good. Love my electric skillet!!

I have now made DELICIOUS CORNBREAD in my electric skillet!!!

Even my puppy eats it like it is CANDY!! THAT in it's self is a HILARIOUS process!! He eats until doesn't want more, basically eating the cheese off the top that I melt and then cool. Then he takes the corn bread that is left and hides them every where!! He is SO disappointed when there is nothing left but DRY CRUMBS when he goes back the next day, looking for his num-nums!! He is even MORE DISAPPOINTED, when Mom vacuums them up in a couple of days!!!! I KNOW I shouldn't laugh, but his poor little expression on his face is SO unhappy!! Then, I just HAVE to give him dog biscuits or liver snaps, or SOMETHING so he won't be so sad!!!

As far as the cornbread, what I do, is mix the ingredients for a SMALL batch of cornbread....about one third of my regular recipe, and fill a microwave safe ceramic bowl about 2/3s full.......AFTER it has been sprayed liberally with non-stick Pam or other such product. Then, on goes the lid to the frying pan with the ceramic bowl centered in the skillet!!

The recipe calls for 20 minutes of cooking time at 400 degrees, but it probably takes 35 minutes doing it this way. You will know when the "loaf" is done when it just barely begins to pull away from the sides of the bowl. Beautiful golden top crust!!
BE SURE TO TEST COMPLETE DONE-NESS, BY STICKING A KNIFE THROUGH THE ENTIRE LOAF IN THE CENTER, IF IT COMES OUT CLEAN, IT'S DONE, IF STILL HAS BATTER ON IT cook just a bit longer!!
