…… Carrot Cake Butter recipe request

OK, I've just about died and gone to Heaven. This passed week we were traveling in the Smoky Mountains and I stopped at this little place and found a jar of something I've never seen nor hear of: Carrot Cake Butter

Oh my stars and garters, it is soooo good. But I can't find a recipe for it online. Will someone please take pity on me and ask around to see if anyone they know has such a recipe? Thanks!

I would think if you puree the stuff you would get an "apple butter" texture, which I gather is what you are looking for in a carrot cake butter.

BBL ... THANK YOU!!!! That last one you posted looks like it is the right one. The one I tasted definitely had some nuttiness to it.

I am definitely trying this. I love trying stuff I find at roadside stands and I'd never seen this before. I also picked up some real sorghum and several different flavors of apple butter to try to see if I can duplicate them here at home. The candied apple butter is very good.

I already make carrot cake jam but mine has pineapple in it and the carrot cake butter doesn't.

Our little community has an annual Sorghum Festival in the early Fall where there is a family which sets up their copper kettles and demonstrates making different butters. Their pumpkin butter is to die for!!
