Christmas Potluck meals

We have two potluck lunches, one dinner to go to this week. and at least another next week. Anyone have a good, easy, quick, tasty ideas that I can make to take along??? Any ideas are appreciated - thanks.

Buy a pot roast and cook in the crockpot. When it starts falling apart, cool, drain and shred the beef by pulling apart with forks.

Add ketchup, brown sugar, worcestershire, a bit of mustard and cooked onion bits. Put it back into the crock pot for transport.

Buy a couple packs of hamburger buns and serve.

Easy.

What about...

Buy a Sara Lee pound cake. Thaw and cut lengthwise into 3 equal pieces. Spread raspberry or other flavored jam into each of the two bottom layers. Put it back together and ice with a can of white icing.

Make a shallow indentation lengthwise in the center of the cake, and along the top of the icing spread a streak of same jam/preserves in that indentation.

Stick a couple holly leaves on top, and it's Christmas ready!

It takes about 10 minutes total!

Creamy Cheesey Potatoes seems to be a big hit around here, no matter the occassion - double recipe if needed & use a 3qt bowl.

Cheesy Potato Casserole

8 oz [1 cup] velveeta cheese
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup shredded chedder cheese
1/2 white onion - chopped and sauted til tender
4 cups country style hash browns - thawed
1 tsp minced garlic (more if you like - I usually double this)
1 tsp onion powder
seasoned salt & pepper to taste

In a skillet melt 1 tablespoon butter. Add onions & saute til translucent & soft.

Cube velveeta cheese & put in a bowl. To cheese add sauted onions, shredded cheese, mayo, sour cream & spices. Mix thoroughly.

Add hash brown potatoes & mix together until well combined.

Pour into a 2qt baking dish & bake for 1hour at 375 degrees.
[about 1/2 way through you mayl want to give this a quick stir].

Serves 4-6.

[Variation: Add 1/2 jar of real bacon bits to mix before baking.]

Other ideas are Broccoli Casserole, Green Bean Casserole, Cranberry Relish, or Honey & Ginger Glazed Sweet Potatoes.

this dish always get rave reviews:

1/2 a stick of butter melted in a 3 quart dish in a 350 degree oven

mix in bowl
1 box corn bread mix
1 can whole corn
1 can creamed corn
1 egg
8 oz. sour cream

pour into the 3 quart dish and bake for an hour
