Custard Pie. Makes it's own crust.

Here is a simple recipe that my family loves. This recipe is the reason I had to have my first blender many years ago. A friend served it at her wedding shower and I was determined to save up enough money to buy that blender!

Custard Pie

4 eggs
1 cup sugar
1/4 cup soft butter
2 cups milk
1/2 cup all purpose unbleached flour
1/4 teaspoon salt
1 teaspoon vanilla extract
Coconut to taste, optional
Cinnamon to sprinkle

Place all ingredients except the cinnamon in a blender in order given.
Process until throughly blended; it will be slightly foamy.

Pour into a buttered casserole dish. Sprinkle top with cinnamon. Bake at 375º for 45 minutes to 1 hour. This makes it's own crust. The top will brown and puff up as it cooks but will settle down as it cools.

Without going and looking my recipe up this looks very like one I have used for years and my family really likes. Especially great when the meal is a little thin on protein or when you are really in a hurry for a dessert.

The only bad thing about it is that it has NO calories. Ha Ha.
