Chicken Pasta Salad
3 or 4 cooked boneless, skinless chicken breasts, cubed (or use equivalent canned chicken)
1 lb bag pasta (rotinni, elbow mac, shells, etc.) , cooked, drained and cooled
1 cup cubed cheese (I used Colby)
1 cup diced celery
1 small can sliced olives
1/2 cup chopped green onions
About 2 cups or less broccoli, cut into small pieces
1 cucumber, peeled, seeded and diced
Dressing
2 cups mayo
1 teaspoon plain yellow mustard
2 tablespoons ketchup
1 packet ranch dressing mix
(add a little milk to thin the dressing)
Mix mayo, mustard, ketchup, dressing mix, and milk and stir until smooth. Fold into other ingredients. Chill a couple of hours.
