Baking Keto Garlic Bread

I used this recipe to make the pizza. It was my first crack at making it and it turned out nice. Just add the sauce and the toppings to your liking. I make and bake the dough first. Then add the toppings after the first bake then bake for about 10-15 minutes so cheese melts.

The BEST recipe for cheesy keto garlic bread - using mozzarella dough. At only 1.5g net carbs per slice, this is an absolute keeper for your low-carb recipe folder.

Ingredients

1.75 cups pre shredded/grated cheese mozzarella
0.75 cups almond meal/flour *see recipe notes below
2 tbsp cream cheese full fat
1 tbsp garlic crushed
1 tbsp parsley fresh or dried
1 tsp baking powder
pinch salt to taste
1 egg medium


Instructions

Place all the ingredients apart from the egg, in a microwaveable bowl. Stir gently to mix together. Microwave on HIGH for 1 minute.

Stir then microwave on HIGH for a further 1 minute.

Add the egg then mix gently to make a cheesy dough.

Place on a baking tray and form into a garlic bread shape. Cut slices into the low-carb garlic bread.

(If making pizza, I placed the dough on parchment paper on a 12-inch pizza pan. I formed the dough around the pizza pan)

Optional: Mix 2 tbsp melted butter, 1 tsp parsley and 1 tsp garlic. Brush over the top of the low-carb garlic bread, sprinkle with more cheese.

Bake at 350F for 15 minutes, or until golden brown.

Recipe Notes

Nutrition values are for the ENTIRE dough recipe. Divide the values by how many slices you make. I generally cut the garlic bread into 10 slices.

Mozzarella dough can also be made by replacing the almond meal/flour with 1/4 cup (4 tbsp) coconut flour.

I can see using this basic recipe for cinnamon bread, just omit the garlic and parsley seasonings, add in 1-2 tbs of stevia/Spelnda/Swerve, mold into a flat bread on baking sheets and sprinkle with more sweetener and cinnamon - oh and butter too. Maybe add 1 tsp of vanilla to the dough. I sure do miss those cinnamon rolls!
