…… Looking for Lard

I'm trying to find real lard. The stuff they sell in the grocery store is not real lard but some kind of concoction I don't want to even try to spell.

Do any of you use lard or know of a good place to find it?

You might try checking local butcher shop some of them make it or they might sell you the fat off hogs and you can make your own. I know when I have hog butcher they always ask me if I want the lard fat and only include it if I say yes so don't know what they do with it other wise as they don't process it for lard there.

Talk to your local meat locker that processes hogs. When we get ours done, I'll tell them I want everything but the squeal. This last time, we took in a boar that we waited a little to long to castrate. The butcher told me the meat tasted fine, but the fat was 'off'. Told them to pitch the fat on that one, but to save the lard off the sow we took in at the same time. When I get it home, I melt it on top of the woodstove, then add an equal amount of water and let it cook down a little. Take it to the garage to let it cool and the fat comes to the top. I scrape off the fat (the water and icky bits sink to the bottom). I repeat the process twice more, then melt it one last time. That time it gets run thru a coffee filter into a clean canning jar, closed with a lid, and put into the pantry. As it cools, it seals the jar.


I haven't bought shortening in years.

A large health food store might sell it - Trader Joe's/Whole Foods. I don't know for sure. Also, double check in the refrigerated section of grocery stores by the sausages and bacon, I've seen it there tucked into a corner shelf. Often, the staff working behind the meat counter have no idea what is actually out in the store. If you have a small enough grocery store, talk to the store manager or meat manager, he may know how to get it or may even order it for you.

I second the meat market/ meat processors. it's the only place to find lard here really. like the op said the stuff in the stores is not real lard

wonder if a mexican market would have it?

That's a good idea. A Mexican or maybe an Eastern European food market.
