Homemade Blender Mayonnaise

1 egg
1/2 tsp. salt
1/4 tsp. dry mustard
1 1/2 tsp. lemon juice OR wine vinegar
1/4 C. plus 2 Tbsp. safflower oil
1/4 C. plus 2 Tbsp. olive oil

In blender container combine egg, salt, mustard and lemon juice, blending only for 2 or 3 seconds. Slowly drizzle in the oils, blending until smooth and thickened. Makes 1 cup.

Hi Laruie,

Thanks I went crazy today trying to find that recipe. Do you think it would work if I only used olive oil insteat of the two oils?

Hi, Marci! You're welcome. :)

I'd bet it would work just fine with olive oil, I've seen other recipes that used it by itself. Here's another one I found that's very similar but only uses one kind of oil:

Mayonnaise

Yield 1 ½ cups

1 large egg
3 Tbsp. cider vinegar
½ tsp. salt
½ tsp. dry mustard
1 ¼ C. oil (vegetable, olive, and/or canola)

Blend the egg, vinegar, spices, and 2 Tbsp. of oil for a few seconds. Without turning off the blender or food processor, slowly pour in the remaining oil. As soon as it is mixed in, turn of the blender and transfer the mayonnaise in the container.

Oh my! Thank you for these recipes!

I have been paying very high prices for my canola oil mayonaisse which I found in a specialty food store 25 miles away. I am allergic to the soybean oil that seems to be in most prepared condiments and salad dresssings lately.

Geez, what is it with soybeans and soybean oil in everything lately? They seem to be force feeding us this genetically modified food, even though we don't want it. I used to be able to eat soybeans years ago before everyone converted to the genetically modified seeds, now they just keep me in the bathroom or make me itch.

When you make your mayo try this NYC Deli recipe. It is fantastic for cole slaw, salads, and sandwiches.

1 cup real mayo
1/4 cup chili sauce
1/8 cup sweet pickle relish

Mix and store in fridge.
