Any bread you make in a regular loaf pan works great. My personal favorite are some of the more popular lemon poppyseed, banana walnut, blueberry (Sam's carries packages of dried blueberries), strawberry.

Strawberry Tea Cakes

Ingredients

1 3/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1/2 cup unsweetened flaked or shredded coconut
2 eggs
1/2 cup oil
1 1/2 cups strawberries, hulled and halved lengthwise

Instructions

Preheat oven to 350 degrees. Stir together flour, soda, salt, and sugar. Stir in coconut. In separate bowl combine eggs and oil. Add berries and stir gently. Gently add flour mixture to berry mixture and stir to blend. Pour into greased muffin cups, filling each cup half full. Bake for 20-30 minutes. You may top with whipped cream. Yield: 18 cakes.

This is for a cupcake mold but can obviously be adapted for mini-molds as well.
