Onion Rice Mix

4 C. uncooked rice
1 envelope onion soup mix
1/4 C. dried minced onion
1 Tbsp. parsley
1/2 tsp. salt

Lemon Dill Rice Mix

4 C. uncooked rice
1/4 C. grated lemon peel
1/4 C. powdered chicken soup base
2 Tbsp. dill
1 Tbsp. chives
1/2 tsp. salt

Vegetable Rice Mix

4 C. uncooked rice
1 envelope vegetable soup mix
2 Tbsp. EACH dried minced onion, dried minced celery and dried minced pepper
1 Tbsp. parsley
1 tsp. salt

Creamy Herb Rice

4 C. uncooked rice
1/2 C. instant nonfat dry milk
1/4 C. Dried minced celery
2 Tbsp. dried parsley
2 Tbsp. thyme
1 Tbsp. marjoram

To use, Mix 1 C. of any of the rice mixes with 2 C. liquid, either water, juice, broth or a combination. A tablespoon of butter or margarine is a nice addition. Place the rice, liquid and butter on high heat and bring to a rolling boil. Immediately reduce the heat to very low, cover and simmer the rice for 10-15 minutes or until all the liquid is absorbed.

Variations: It's easy to make a meal in one pot if you sprinkle a cup of the rice mix around a roast or several meat or fish pieces before baking. Just remember to add 2 C. of liquid, cover, and bake for at least 30 minutes or until meat is tender. Or try serving the prepared rice combined with stir-fried vegetables, shrimp or chopped ham (or Spam! :lol: )

Rice-a-Roni

1 Tbsp. oil
1/2 lb. pasta (vermicelli or spaghetti)
1 C. long grain rice
1 small onion, chopped
1 Tbsp. chopped fresh parsley or 1 tsp. dried parsley
2 C. chicken or beef broth

Place the oil in a pot and break the dried pasta into 1/2" to 1" lengths. Heat the pasta in the oil until it begins to brown slightly. Add rice, onion, parsley and broth. Stir, cover tightly and cook about 20 minutes. Fluff with a fork and serve.

Lentil Rice Casserole

1 1/2 cups lentils, uncooked
1 C. brown rice, uncooked
1/2 C. instant minced onion (or 3/4 C. fresh)
1 tsp. basil
1/2 tsp. oregano
1/2 tsp. thyme
1/2 tsp. garlic powder
6 C. chicken broth or water

MIx in a casserole dish. Bake at 300 degrees for 2-2 1/2 hours (or put in a crock pot on low all day). During the last 20 minutes, top with about 1/2 C. grated cheddar cheese. Just before serving, stir to blend melted cheese and garnish with minced fresh parsley. Can be served with plain yogurt, sour cream or barbecue sauce.

I like to mix up the dry ingredients and 6 chicken boullion cubes (or 6 tsp. granules) in a quart-size canning jar or mayonnaise jar to keep it handy. Then all I have to do is add water and cheese.

Toni's Spanish Rice

1 C. long grain rice
1 tsp. salt
1/2 C. onion, chopped
1 small can tomato sauce
2 tsp. oil
1 tsp. seasoning salt
1 tsp. garlic salt
2 C. water

Pour oil into a saucepan and place over medium heat. Pour in rice and fry until brown. Add all other ingredients. Turn heat on low, stir and cover. Cook until rice is done and water is gone.

I've just recently started eating rice.

There are 2 favorites that are simple and easy to make that I keep in the fridge that the family likes to eat instead of junk food.

1 is to just simply cook instant rice with chicken boullion or chicken soup base, margarine and salt. It has a mellow flavor.

The other one is to cook a bag of Lipton Taco Rice with a can of black beans. It makes a great snack.

They both microwave well to heat up.

Wonderful recipes. A lot of them look like they'd be good made-ahead recipes if you used dehydrated onions and powdered soup stock. Thanks for sharing!

Garlic/Mushroom savory White/Wild rice

1 c. white rice
1/3 c. wild rice
1 c. dehydrated mushroom slices
1/2 tsp garlic powder
Black pepper to taste
salt, to taste

Cook wild rice in about 1 cup water til done (1 hour)
Put mushrooms to soak in 2 cups warm water.
When wild rice is cooked, put white rice,garlic powder, black pepper, and the drained mushrooms(reserve the liquid) in the pot. Add to the mushroom liquid enough water to make 2 cups and add to the rice. Bring to a boil, turn down to a low simmer, cover and cook for 18-20 minutes.

I served mine as a side dish, buttered.

Wow, I think this is the most replies I've ever had to a post! :lol: I'm glad y'all like the recipes. They are definitely "make ahead" mixes, I keep a gallon jar of the vegetable rice mix and about a dozen quart jars of the lentil-rice casserole on the shelf.
