Youngest grandson and I were at the Evil Empire yesterday to pick up some weekend supplies; he wanted to have pancakes for breakfast Sunday morning. We hit the muffin mix aisle and picked up a few packets of Martha While muffin mixes to use to make pancakes. Here is the recipe (you can also use the Betty Crocker muffin mix packets.):
I packet muffin mix (7.4 oz ish)
2/3 cup milk
1 egg
Mix the egg and milk together until blended. Stir in muffin mix until all ingredients are blended.
I use a small skillet to cook the pancakes one at a time.
This is a handy recipe if you want a quick treat but don't want to use the oven and heat up the house in summer.
For chocolate overload, use a chocolate chip muffin mix and spread a little Nutella on the warm pancakes - I fold them in half for less mess.
