Recipe Need recipes for Andouille and Chorizio

Due to issues with nitrates/nitites, I can't buy most versions of these. And the ones that I can buy want a fortune for a small amount.
A few years ago I made chorizio with great success. But, unfortunately, I have misplaced the two recioes that I "melded" to come up with our version.
So if you have a TNT recipe, would you share it please. I'm planning on making batches the next time there's good sales on pork.
And I wouldn't be adverse to a good breakfast sausage recipe either.

Well no answers here so I went digging online. I decided to use to use the recipes from the guy who wrote Hunt, Gather, Cook. With a few adaptions for our household. I mainly adapted the chorizio recipe. I made it all pork. Then I added some sweet peppers, ancho, and guardillo. I don't have a smoker so I used smoked paprika. (Wow!) And lastly, I had to sub the wine, so I'm using pomegranate juice.
The andouille recipe is almost exact except for using smoked paprika and pomegranate juice.
I should be finished soon, then a few weeks in the freezer for flavors to meld before I try some. Keeping fingers crossed for good results.
