Recipe No Flour Molasses Cookies (using ground rolled oats)

Molasses Cookies

2 cups rolled oats ground fine
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup sugar
1 1/2tablespoons melted shortening
1/4 cup molasses
1/4 cup milk

Mix the dry ingredients, add shortening, molasses and milk. Mix thoroughly. Flour a board with a little of the ground rolled oats. Roll out in a thin sheet and cut with a cookie cutter. Bake in a moderate oven, 350 F, for about 12 minutes.

Now THOSE sound good. I bet they're nice and chewy?? I'd add some cinnamon, maybe some other spices, too.

I might try those with a couple substitutions. Maybe throw in some raisins or dates too.

OK, I substituted sorghum for the molasses, cream for the milk, ghee for the shortening, stevia for the sugar,and added raisins and cinnamon. Ok, not the same recipe, but definitely delicious!
