*Orange Meringue Pie

I give up.
Now this is way different! From the 1953 Joy of Cooking I'm wandering through.

ORANGE MERINGUE PIE

An already baked 9-inch pie shell

Combine in the top of a double boiler:

1 cup sugar
5 to 6 tablespoons all-purpose flour
1/4 teaspoon salt
3/4 cup warm water
3/4 cup orange juice

Cook and stir these ingredients over direct heat (not in the double boiler) until they boil. Place them in the double boiler over boiling water and cook for 10 minutes longer. Pour a little of this mixture over:

3 beaten egg yolks

Beat this, then add it to the mixture in the double boiler. Cook and stir the custard for 5 minutes over boiling water. Beat in:

1 tablespoon butter
2 tablespoons lemon juice
1 teaspoon grated lemon rind
1 teaspoon grated orange rind

Cool the custard. Pour it into the cold pie shell. Cover with a meringue:

3 egg whites
1/8 teaspoon salt
1/4 teaspoon cream of tartar

Beat above until frothy, add gradually, beating constantly:

4 tablespoons sugar

Whip meringue until stiff and glossy. Heap on pie, spread to edges of dish. Bake in 350 degree oven for about 15 to 20 minutes.

I give up.
I'm going to make it too. But I've decided to make it with one of those crushed chocolate cookie crusts. Does that sound too overboard?

I've never cared for mixing citrus and chocolate flavors myself, but that's just me.

If you have good acidic orange juice one can make an orange pie much the same way as one does a key lime pie. Basically just three ingredients - orange juice, egg yolks, and sweetened condensed milk.

I am making this pie tomorrow, to try out of hubby. this pie sounds wonderful.........just wonderful. can't wait to try it out.

and guess who has a large Seville orange tree in her back yard? I make pies, marmalade and cakes with the oranges. I also keep lots of grated rind on hand, think its called zest? Anyway, the only thing better than Key Lime is Sour Orange. here is the recipe that I use. It comes from Cross Creek, Fl, the home of Marjorie Kinnan Rawlings who wrote THE YEARLING.

The wild orange pie is North Florida's answer to South Florida's Key Lime pie

2/3 cup juice from wild oranges
1 tablespoon unflavored gelatin
1/2 cup hot water
1/2 cup orange blossom honey
1 cup cottage cheese
9" graham cracker crust.

Mix wild orange juice and gelatin in blender and allow to stand a few minutes.
Dissolve honey in hot water and add to juice. Blend until gelatin is dissolved. Add cottage cheese and blend until smooth and creamy.
Pour into crust and refrigerate until firm.
Note: Lemon, lime or calamondin juice may be substituted for equally good pies.
