peanut flour

HI,
I just had about 50 pounds of peanut flour given to me, and don't know how to use it, so would really like recipes for it. thanks so much.

I've used it to suppliment flour in peanut butter cookies to add extra peanut flavor. I've read that you can supliment as much as 20% peanut flour in baked goods to increase protein content without altering the flavor significantly, but then you do run the risk of the resulting product being on the oily side.

I just remembered you can add it to oatmeal prior to cooking to increase protein content as well. You could probably make peanut milk (like soy or almond milk). Try mixing a few cups of it with a liter of water and then boiling it. Let it sit for an hour and then strain it with cheese cloth. The resulting liquid can be used as a milk substitute in baking or regular consumption, though like I said I've never tried this with peanut flour.
