Seafood Curry Cream Soup

This is a recipe I invented back in my low carb days...now I use non-fat creamer or condensed low fat milk instead of heavy cream and it is still delicious.
I have added potatoes now since I'm no longer on low carb. I have included this recipe in a cookbook I am writing and thought I would give you a preview.

Seafood Curry Cream Soup

1/2 onion minced
1 shallot minced
2 cloves garlic minced
3-4 stalks celery chopped
3 slices bacon
1 can clams and juice
1 can chopped tomatoes and juice
curry powder to taste ( 2-4 tsp)
1 or more shakes of cayenne pepper depending on your tastebuds
1 cup chopped precooked boiled potatoes
1 fillet firm white fish like tilapia, mahi mahi, cod, halibut....whatever you like
1 can of lowfat condensed milk or 4-6 ounces nonfat creamer
1 cup milk
salt and pepper

sautee the onions and celery in olive oil with chopped bacon until celery starts to sweat. Add garlic, tomatoes and juice, clams and juice, add curry powder and cayenne, cover and simmer for about 10 minutes. You want the celery to be cooked but still have some crunch. Add potatoes. Add fish and gently push it into the cooking liquid and cover for 5 minutes or until fish is opaque. Break up fish into chunks. Add condensed milk or cream plus milk, season with salt and pepper and serve.

So what kind of curry do you use?

I dunno Cin......just one of those mixes in the jar in the spice aisle.....Durkees maybe. The bright yellow stuff. :D

LilRose I want a copy of your cookbook! Hey do you or Cin have any idea where I might find the real red curry powder? I had a friend send me some from South Africa that I just loved. I have since lost touch with him but I sure would love some of that Red Curry Powder mix.

Kathy...McCormicks makes a red curry powder. That would be the Indian type. Also, anywhere they sell Thai ingredients you can get Thai red curry powder, also this somes in a paste in a small jar. Very HOT!

About the cookbook, I am doing this for my grown children. I am putting together all their favorites from when they were growing up plus lots of new recipes I have developed or found since then.
I am doing it on a computer program with lots of illustrations and little anecdotes about why they loved a certain recipe or which family member contributed it. It is really coming out great!
I have run into a snag though because hubby bought me a new computer and my illustration software isn't compatible with the new computer! ARGH! He promises to fix the problem soon. When I am done I will put it all on a disk and take it to Kinkos. They will print it and bind it for maybe $25 a copy. I will have enough done for the kids and sisters and one for me. HEY if it comes out great maybe I will take it to a publisher....you never know!
I am amazed at how fun it turned out to be but WOW it has taken me a long time. I want it done for Christmas.......I said that LAST year! LOL!

I tried repeatedly to load one of the cookbook pages but for some reason it won't let me GRRRRRRRRR

LilRose that is just the best gift I can imagine. Your kids will treasure it. I have been thinking about doing something similar. What program are you using to do the cookbook? Also thanks for the information on the curry. I had no idea how many different curry types are in existence. Have you have mixed up your own?

HI! I use the Print Shop and The Big Box Of Art for the programs. The Print Shop has the basics for page making and also some illustrations. the Big Box Of Art has 80,000 pieces of art from cartoons to photos and everything in between. PLus, it has scads of patterns to use as back grounds or to clip and add to something for an effect. I miss using it and can't wait till hubby does something to this new computer so I can use it again......sigh.....
It has turned into a great project. I sure wish I could get that page to load on here to show you...maybe I will try again.
