Stuffed Hot Peppers

I just wondered if anybody else has ever had stuffed Hungarian peppers? I had never heard of them until my brother told me he ate them at an Italian restaurant that he frequents. They sounded really good, but I had never seen them on any menu. As luck would have it, we ate at a restaurant in town a couple months later, and they had them! I made them myself tonight and they are soooo good. I slit the peppers down one side and took the seeds out. Then I stuffed them with hot sausage that I had canned for y2k and never used. I covered them with spaghetti sauce and put some Motzerella cheese on top. Covered the pan with foil and baked for an hour. I could really pig out on these! I think I'm going to have to plant some of those peppers this summer! Our store has ground turkey on sale for .50 a pound and I'm going to try to make my own hot sausage out of it. That way it would be a pretty cheap meal!

That sounds really good too. I'll have to give it a try. My daughter makes her sauerkraut with some hot pepper rings thrown in, and that's really good. I would never have thought of stuffing whole ones. Boy, the things I learn on here!!!! By the way, how do you can them so they don't get mushy? I canned just the peppers in vinegar this year, so would you do them the same way?
