Spices Tell me about Coriander.

I know what coriander is, of course I don't mean "tell me obvious things from Wikipedia", lol.

I made homemade bratwurst the other week, so now I have coriander in the pantry. It's not an unknown, I've used, smelled, and tasted it before, and yet it wasn't something I kept in the pantry. Know what I'm saying?

It has piqued my interest a great deal. I ground some in a mortar and pestle with dried celery, added sage, garlic, onion, salt, pepper, used it as a dry rub for roasted chicken.

I would appreciate any deep lore about coriander. It's so fragrant, how are y'all harnessing that?

I'd suggest toasting it in a dry skillet berfore grinding it. Mixed toasted and ground with a FEW grains of fenugreek, some paprika and mixed with a bit of garlic powder, salt and black pepper it makes a wonderful rub for roast chicken. Just mix it in a bit of olive oil or melted butter and rub all over and inside the bird. If you can find the Caucasian Blue fenugreek (from Georgia the country not the state) and a bit of summer savory it's even better.

This place is awesome. I bet I could show up like some judge on Chopped, and say "I have lamb shanks, pears, or sesame seeds" and come back to see what everyone came up with, lol.

Pebbles, I was wondering if people who thought cilantro was disgusting had the same issue with coriander. It seems no? Which is helpful info to be sure. Thanks.

I'm among the folks who detest cilantro; have never been able to handle the strong soapy scent and taste that I get with it. But I do grow it in my herb garden for the folks who can't get enough fresh :) And I save the seeds because I do like to use coriander. The seed-saving has gone well the last few years with a high viability with seed saved for four years growing well ~
